Thecha Maggi is a spicy twist on the classic Maggi noodles, combining the fiery flavors of Thecha, a traditional Maharashtrian chutney made from green chilies, garlic, and peanuts, with the comforting noodles. This fiery dish adds a punch to the usual Maggi taste, making it perfect for spice lovers. Here’s a simple recipe to make Thecha Maggi at home:
Ingredients:
For the Thecha:
6-7 green chilies (adjust to spice preference)
4-5 garlic cloves
2 tbsp roasted peanuts
1 tbsp oil
Salt to taste
1/2 tsp cumin seeds (optional)
1/4 tsp turmeric powder (optional)
For Maggi:
1 pack Maggi noodles (or any instant noodles of your choice)
Water (as per the packet instructions)
Maggi tastemaker (or noodle seasoning)
Instructions:
- Make the Thecha:
Heat 1 tbsp oil in a pan and add the cumin seeds if using. Let them splutter.
Add the green chilies and garlic, and sauté for 2-3 minutes until they soften.
Once softened, remove from heat and cool slightly.
Add the roasted peanuts to the pan and grind the mixture into a coarse paste using a mortar and pestle or a food processor. Add salt to taste.
Optionally, add turmeric powder for extra flavor.
- Prepare the Maggi:
In a pan, add water as per the Maggi packet instructions and bring it to a boil.
Once the water is boiling, add the Maggi noodles and cook for 2-3 minutes, stirring occasionally.
Add the tastemaker or noodle seasoning and mix well.
Once cooked, remove from heat.
- Combine Thecha with Maggi:
Add the prepared Thecha to the cooked Maggi noodles and mix well. You can adjust the amount of Thecha based on how spicy you want the dish.
- Serve:
Serve the spicy, flavorful Thecha Maggi hot. Garnish with fresh coriander if desired.
