Ingredients:

1 cup Suji (Semolina)

1/4 cup Ghee (Clarified Butter)

1/2 cup Sugar (adjust to taste)

1 1/2 cups Water (or you can use half water, half milk for a richer flavor)

1/4 tsp Cardamom Powder (optional)

A pinch of Saffron (optional, for color)

Chopped Nuts (Cashews, Almonds, Raisins)

A pinch of Salt (to enhance flavor)

Instructions:

  1. Roast the Suji (Semolina):

Heat a pan on medium heat and add the ghee.

Once the ghee melts, add the suji (semolina) and roast it gently while stirring constantly. Keep the heat medium-low to avoid burning.

Roast until the semolina turns light golden brown and releases a pleasant aroma (about 5-7 minutes).

  1. Prepare the Sugar Syrup:

In another pan, add the water (or milk, if you prefer) and bring it to a simmer.

Once the water is hot, add the sugar and stir until it completely dissolves.

You can also add cardamom powder, saffron, and a pinch of salt at this stage for flavor.

  1. Combine the Syrup and Suji:

Once the suji is roasted, carefully pour the hot sugar syrup into the suji, stirring constantly to avoid lumps. Be careful as the syrup may splutter.

Stir continuously until the halwa thickens and the semolina absorbs the liquid.

  1. Cook and Serve:

Once the halwa reaches your desired consistency, add chopped nuts (cashews, almonds, raisins) and stir them in.

Cook for a few more minutes to allow the nuts to soften and the halwa to reach a smooth, pudding-like consistency.

  1. Garnish and Serve:

Garnish with more nuts or a sprinkle of cardamom powder.
